This Southern delicacy has a little kick and is rich and full of flavor. You really can’t go wrong with crawfish in any dish, especially when you’re using Poppa Earles.
Place large pot on stove on medium high heat. Add butter and Sautee onions, celery, and green bell pepper. Cook until onions become translucent, about 5 minutes then add garlic and cook for additional 2-3 minutes. Add tomato sauce, bay leaves and crawfish and sauté additional 5 minutes. Add the seafood stock, stir, cover and let simmer for 45 minutes. Add Worcestershire, hot sauce, and parsley. Season with Poppa Earle’s Seasoning.
