Some of the most delicious sugar puffs you will ever try!
1 package (2 1/4 tsp) active dry yeast
1 1/2 cup warm water (110° to 115°)
1 cup evaporated milk
1 TBSP Vanilla
1/2 cup shortening
1/2 cup sugar
2 large egg, room temperature
7 cups self-rising flour
Oil for deep-fat frying
In a large bowl, dissolve yeast in warm water. Add milk, sugar, shortening, egg and 4 cups flour. Whisk until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). Cover and refrigerate overnight.
Turn onto a floured surface; roll out into a rectangle and square up edges. Cut into 2-inch squares.
In a deep cast-iron or electric skillet, heat oil to 350°. Fry squares, in batches, until golden brown on both sides. Drain on paper towels. Sprinklel warm beignets with confectioners' sugar.
