Overnight, put beans in a large bowl to soak in refrigerator overnight. (Water level should be at least 1″ over beans.)
In a large pot add sausage and evenly brown approximately 10 minutes. Next add onions, bell pepper and garlic and Sautee approximately 5-10 minutes until onions become translucent. Add tomatoes and jalapenos.
Place beans in and cover with veggie broth.
Bring beans to a rolling boil, then lower heat. Simmer for 1-2 hours, or until tender. (Stir often so beans do not stick to bottom and burn!)
Add shrimp tails and cook additional 20 minutes
OPTION: For creamier beans, remove 2 or 3 cups of beans from the pot, puree them with a mixer or blender and return to pot.
