The key to this recipe is the Roux!
Heat oil in a heavy bottom pot over medium-high heat. Add the flour and whisk in until fully combined. Continuously stir for 20-25 minutes or until the roux becomes a deep peanut butter color (almost chocolate). Remove from heat and let cool. Do not let the roux burn as it will ruin your dish (if you smell it burning or see small black specs, you will need to throw it out).
The Cajun Gumbo
In a separate pot over high heat, brown sausage thoroughly for approximately 10-15 minutes and remove from pot and into metal bowl. Add the seasoning – onions, bell peppers, carrots and celery. Continue to cook and stir as needed, about 10-12 minutes or until the veggies soften and become translucent. Add the garlic and bay leaves and cook for an additional 3-4 minutes. Add chicken broth and let come to a simmer. After simmering, add cooled down roux into pot and dissolve in
Add the chicken breasts and cover and let simmer for 90 minutes. Add file, Tabasco and green onions. Let set for 15-20 minutes and serve with white rice.
Gumbo is a beloved dish that originates from the vibrant culinary landscape of Louisiana, particularly associated with the city of New Orleans. Our authentic Louisiana gumbo is a fusion of various cultural influences that have shaped our cajun heritage. Typically served over rice, gumbo is rich and flavorful, often showcasing a mix of proteins such as seafood, chicken, and sausage, alongside a variety of vegetables like okra and bell peppers. The dish is renowned for its thick, savory broth, which is often thickened using a method called “roux,” a blend of flour and fat that gives gumbo its distinctive texture and depth of flavor.
One of the most exciting aspects of gumbo is its versatility, allowing chefs and home cooks alike to put their own spin on the recipe. While some might prefer a traditional seafood gumbo brimming with shrimp and crab, others might opt for the heartier chicken and sausage version. Aromatic spices and herbs, including thyme, bay leaves, and cayenne pepper, play a critical role in crafting the dish's flavorful profile, inviting everyone at the table to savor the warmth and comfort it provides. Whether enjoyed at a festive family gathering or a casual dinner, gumbo embodies the spirit of community and creativity, making it a true staple of Louisiana cuisine that continues to delight palates far and wide.
When it comes to storing leftover gumbo, especially after whipping up a delightful Cajun Gumbo recipe, it’s important to maintain all those vibrant flavors for your next meal. First, let the gumbo cool down to room temperature before transferring it to an airtight container. This step is vital, as placing hot gumbo in the fridge can raise the temperature inside the refrigerator, potentially affecting other stored foods. If you’ve created a large batch, consider portioning it into smaller containers for easy reheating later on, making sure to leave a little space at the top of each container to allow for expansion during freezing.
When you’re ready to enjoy your gumbo again, simply take it out of the fridge or freezer, and reheat it gently on the stove or in the microwave. If you’ve stored the gumbo in the freezer, make sure to let it thaw in the refrigerator overnight for the best results. Alternatively, you can use the defrost setting on your microwave if you’re short on time. This technique ensures that your leftover gumbo tastes just as fantastic as the first time around.
