Serving Size. 10 – 12 servings (3-4 pounds per serving)

In and large pot, heat oil on medium to high heat and add sausage. Brown sausage thoroughly 15 -20 minutes leaving a brown residue in the bottom of your pot. Remove your sausage and add your pork to the pot and repeat the process. After pork is browned, remove from pot and add vegetables (onions, bell pepper and celery) and cook till translucent (4-5 minutes). Add garlic and continue to sauté an additional 3-4 minutes. Add sausage and pork back to the pot along with the stock and cover and let come to a simmer for 30 minutes. Remove lid and with a ladle, skim the excess grease and fat off the top. Season with Poppa Earles to taste. Add green onions and rice and cover and let come back to a simmer. Put heat on low and DO NOT remove the lid for 30 minutes. After 30 minutes, stir and fluff the rice. Turn off heat and cover and let sit for an addition 10 minutes. Ready to serve!
